Soft Sugar Cookies Recipe
Another favorite as I was growing up. I’m pretty sure that I ate 100’s of these. Really soft and fluffy without being gooey in the middle.
The story behind this recipe… my mom and dad were walking down the waterfront in New York City when they came across a street vendor that had these cookies. I guess back then you could get all kinds of goodies on the waterfront. My dad liked cookies like nobody’s business. He ate so many of these cookies that day that my mom went back to the vendor and asked for the recipe. The vendor obliged her and she’s been making them ever since.
This has been handed down from grandma “Rhee” to us and now we are sharing with you.

2 Cups – Flour
1/2 teaspoon – Baking Soda
1/2 teaspoon – Salt
1/2 Cup – Soft Shortening
1 Cup – Sugar
1 Egg Yolk
1/2 Cup – Buttermilk
1/2 teaspoon – Vanilla
1 Egg White
Sift together first 3 ingredients. Mix next 3 until fluffy. Mix first 6 together. (Math is everywhere!) Slowly mix in buttermilk, and yes we do suggest real buttermilk. Add vanilla. Beat egg white until stiff then fold into mix. Drop by spoonfuls. Smash to 1/2” thick. Bake at 375 degrees for 20 minutes.
